Santorini's
volcanic soil and high
daytime temperatures and
humidity at night are ideal
for creating a strong red
wine which is well-respected
around the world. It is
these ideals that have
helped the islanders to
produce 36 different kinds
of grapes (white and red)
and leading to excellent
wine producing.
The vines here are in the
form of wreaths so that the
grapes which grow on the
inside are not destroyed
from the strong winds.
White grape production
reaches about 80% and there
are about 1,200 hectares of
both red and white
varieties. The summers are
warm and dry and the winters
mild with few but strong
rainfalls. Most of the
island's terrain is covered
by deposits of volcanic
material (resulting form the
activity of its now dormant
volcano) and its east side
is an extensive, fertile
plain.
